Courgetti with Walnut & Rocket Pesto

Ingredients

  • For the courgetti
  • 2 courgettes
  • 1 handful of sundried tomatoes
  • For the pesto
  • 3 large handfuls of rocket
  • 50g walnuts
  • 100ml olive oil
  • 2 tablespoons water
  • 2 garlic cloves
  • Juice of ½ lemon
  • Sea salt & pepper

Directions

  1. Spiralize the courgettes into a large bowl.
  2. To make the pesto, blend all the ingredients in a food processor until smooth.
  3. Add the pesto to the courgetti and mix well.
  4. Combine the sundried tomatoes with the courgetti.
  5. Season to taste and serve.
