BANANA CAKE

Ingredients

  • 5 large over-ripe bananas
  • 1 cup walnuts
  • 2 cups pecans
  • 1 cup rice flour
  • ½ a cup date syrup
  • 3 tablespoons chia seeds
  • 2 tablespoons cinnamon

Directions

  1. Pre-heat the oven to 145°C.
  2. Blend the walnuts and pecans in a food processor for approximately 30 seconds so that they form a flour.
  3. Combine this with the rice flour, date syrup, chia seeds and cinnamon in a large mixing bowl.
  4. Mash the bananas and stir them in.
  5. Pour the mix into a loaf tin greased with coconut oil.
  6. Bake for 40-60 minutes.
